Most packaged snacks marketed as “protein-forward” or “savory” quietly carry a few grams of added sugar in the seasoning blend — it’s a common way to round out a flavor without more salt. This one skips that step entirely. Rosemary, garlic, and salt do the actual work, and the chickpeas themselves bring genuine crunch once they’ve had time in the oven.
Method
- Preheat the oven to 400°F. Line a rimmed sheet pan with parchment paper.
- Dry the chickpeas thoroughly — a clean kitchen towel works well. This step matters more than any other for getting real crispness, not just golden color.
- Toss the chickpeas with olive oil, rosemary, garlic powder, salt, and pepper until evenly coated.
- Spread in a single layer on the sheet pan. Roast 30–35 minutes, shaking the pan halfway through, until deeply golden and firm.
- Let cool on the pan for at least 10 minutes before eating — they crisp up further as they cool, and taste noticeably softer straight out of the oven than they will 10 minutes later.
Best eaten the day they’re made; they soften in an airtight container after a day or two, though they’re still good tossed into a salad for crunch even then.
Where the added sugar number comes from
Zero. Chickpeas, olive oil, rosemary, garlic powder, salt, and black pepper — none of them contain added sugar, and there’s no sweetener anywhere in this recipe to add any. It’s a genuinely, simply savory snack, not a “reduced sugar” version of something that usually has more.
