Overnight oats solve the actual problem with breakfast on a busy morning — not that oatmeal is hard to make, but that anything is hard to make when you’re already running late. This version leans entirely on real vanilla, warm cinnamon, and a ripe banana for sweetness. No maple syrup, no brown sugar, no honey stirred in “just to round it out.” There’s nothing to round out — it doesn’t need it.
Method
- In a jar or container with a lid, stir together the oats, almond milk, yogurt, vanilla extract, cinnamon, and salt until combined.
- Cover and refrigerate overnight, or at least 4 hours. The oats will soften and thicken as they sit.
- In the morning, stir once, then top with sliced banana and berries. Eat cold, straight from the fridge, or let it sit at room temperature for 10 minutes first if you prefer it less cold.
Keeps well for up to 3 days refrigerated — worth making a double batch on a Sunday.
Where the added sugar number comes from
Zero, and genuinely so, not rounded down. Rolled oats, unsweetened almond milk, plain Greek yogurt, pure vanilla extract, and cinnamon contain no added sugar at all. The banana and berries bring real sweetness, but it’s sugar the fruit already had — not sugar added to this recipe.
